Elderberry syrup
Got this sent to me from a newsletter. Not sure how to alter it to us the concentrate instead of the fresh berries.
I'm sure it would taste great on pancakes
3 cups of water
1 cup of honey
1 cup fresh elderberries
- Place the berries in a saucepan and cover them with the 3 cups of
water.
- Then, bring it to a boil, reduce the heat, and simmer for a half
hour.- smash up the berries. Then, strain the mixture through a mesh strainer.
- Add the honey.
- Bottle and store in the fridge, where it will last a few months.

Re: Elderberry Extract
I added the elderberry concentrate to my favorite Cold Thyme Tea:
1 tsp. dried thyme
thick slice of orange
thick slice of lemon
slice of fresh ginger
1" piece of stick cinnamon
several whole cloves
1 tsp. elderberry concentrate
1 1/2 cups water
Bring everything to a boil; steep until cool. Strain, squeezing out the fruit slices. Sweeten with 1 tsp. honey (any flavor, but I'm partial to rosemary). Reheat, inhale the steam, and enjoy!
